Bite-Sized Blue Velvet Tesseract Cakes

Cake:

1          box Super Moist White cake mix 

1 ¼      cup buttermilk

1/3       cup vegetable oil 

3          eggs whites

1          tablespoon unsweetened baking cocoa 

2          teaspoons royal blue gel paste food color (link)

1          smidge (about 1/16 tsp) violet gel paste food color (link)

Frosting:

1          jar (7 oz) marshmallow creme

2/3       cup butter or margarine, softened

2 ½      cups powdered sugar

1/8       teaspoon salt

1          teaspoon royal blue gel paste food color (or as much as desired)

1          bottle of blue crystal sprinkles

Heat oven to 325°F. Spray a silicon brownie square pan (link) with cooking/baking spray (baking spray is easier to remove later because it has flour in it).

In large bowl, beat cake ingredients with electric mixer on low speed till well blended (to make a darker blue just add more blue gel paste food coloring)

Fill each square roughly 2/3rds full. Place the silicon mold on top of a flat cookie sheet. Bake for about 12-15 minutes (you will tell when it is done when you test it with a tooth pick and the tooth pick comes out clean).

Let the cake squares cool fully before carefully popping each one out of the mold (do this slowly or they could tear). If you want them to be very cubical you can carefully cut off the top layer making the squares more evenly shaped.

In a separate bowl spoon the marshmallow creme into large microwavable bowl. Microwave uncovered for 15 to 20 seconds to soften. Add butter. Beat with electric mixer on medium speed until smooth. Beat in powdered sugar and salt until smooth. Then add in some blue gel paste till desired color is obtained.

Take one square and frost the top lightly. Then stack another square on top to obtain the cube shape. Carefully frost the edges and corners of the cube then set it on a flat surface before frosting the top. ***NOTE! Frosting these is kind of a pain in the ass unless you are very patient! Another thing you can do is just frost the tops, they will taste just as amazing!*** Then sprinkle with the blue crystals.
